
Baked Potato & Cheese Soup
This is my first attempt at creating a soup recipe from scratch to combine some of the favorite foods in our family. My two girls, and their friends, really enjoy this hearty soup. Cut back on the onion and garlic powder if you find those flavors overwhelming, but we like both. There is no reason that oven baked potatoes could not be used if you have leftovers or just don't like the texture of microwaved potatoes.

- Microwave the potatoes for 7-8 minutes. Dice with the skin on into 3/4-inch cubes.
- Cook the bacon until crisp, then crumble it.
- Combine the broccoli and cheese soup, chicken stock, cayenne, black pepper, onion powder, garlic powder, sugar, and crumbled bacon, and bring just to a boil, then reduce the heat.
- Add the diced potatoes and maintain reduced heat until ready to serve.
- Optionally top with sour cream and/or green onion.
