A creamy American cheese soup with carrots and celery — from the 2009 Elkin Soup Off.

Instructions

  1. Bring the milk and chicken broth to room temperature.
  2. Melt the butter and sauté the green onion, carrots, and celery.
  3. Stir in the flour and corn starch until bubbly.
  4. Add the milk and broth and stir until a smooth sauce forms.
  5. Gradually add the baking soda.
  6. Add the cheese and stir until melted.
  7. Season to taste with salt, white pepper, cayenne, and paprika. Add the parsley.
