Persimmon Pudding

A spiced persimmon pudding — a Linebach/Leinbach family tradition served at the family reunion and Thanksgiving.

Instructions

  1. Start by creaming the sugars and butter together; add the eggs, then beat in the persimmon pulp.
  2. Alternate adding the dry ingredients and the milk.
  3. Mix well -- it will be a thin mixture.
  4. Pour into a greased 9x13-inch pan.
  5. Bake at 325°F (165°C) for 45 minutes.
  6. Let cool in the pan, then cut into squares.

Notes

A family tradition on the Linebach/Leinbach side: the persimmons come from the two trees at the Linebach (Ellis) homeplace. Eula, then Helen Jones, traditionally made this pudding for the Linebach/Leinbach family reunion, held the 3rd Sunday of September, and it's also a fixture at the family's Thanksgiving and Christmas get-togethers.
