A quick cheese tortellini soup with white beans and diced tomatoes — from the 2011 Elkin Soup Off.

Instructions

  1. In a large saucepan, bring the broth to a boil. Stir in the tortellini.
  2. Reduce the heat and simmer uncovered for 5 minutes, stirring occasionally.
  3. Stir in the beans, tomatoes, and basil. Simmer for 4-6 minutes, or until the pasta is tender.
  4. Stir in the vinegar. Sprinkle with parmesan and pepper if desired.
