
Dr. Taylor's Brunswick Stew
A four-meat Brunswick stew with lima beans and cream-style corn, simmered most of the day — from the 2008 and 2009 Elkin Soup Off.

Instructions
- In the morning, put all the meats in a pot with enough water to cover them.
- Boil until the meat falls off the chicken bones. Remove the meat with a strainer and remove all the bones.
- Return the meat to the water, and add the lima beans and tomatoes. Add the red pepper.
- Boil for several hours, stirring frequently.
- Cream the potato and add to the stew along with the corn, black pepper, and brown sugar.
- Add the butter, tomato paste, and catsup. Stir frequently until the stew reaches the desired thickness.

From the 2008 and 2009 Elkin Soup Off. Traditionally started around 9:00am and finished in the late afternoon (4:00-5:00pm), the meat simmering the whole time.
