Tarragon Potatoes

Ingredients
  

  • 1 Medium Potato Red or white. Wash and cut into bite size piece. Skin on is fine.
  • 2 cups water cover potatoes by 1 inch
  • 1 tbsp salt
  • 1 tsp Dried Tarragon 1 tbsp fresh
  • 1 tbsp Butter or more

Method
 

  1. Boil potatoes in salted water until fork tender
  2. Drain potatoes and return them to the hot pot (off heat)
  3. Add tarragon and butter, stirring to coat
  4. Let stand 3-5 minutes then serve warm
