Spinach Tomato Tortellini

Ingredients
  

  • 16 oz Cheese Tortellini
  • 16 oz Diced tomatoes with garlic & onion
  • 1 cup Fresh chopped spinach
  • 3 cloves garlic minced
  • 2 tbsp all-purpose flour
  • 3/4 cup milk
  • 3/4 cup heavy cream
  • 1/2 tsp salt More for pasta water
  • 1/4 tsp ground black pepper
  • 1 1/2 tsp Dried Basil Leave
  • 8 oz Mushrooms sliced
  • 1 tsp oregano
  • 6 oz Bacon, Pancetta, or Ham chopped
  • 1/4 cup Parmesan cheese grated

Method
 

  1. Bring a large pot of salted water to boil. Add pasta and cook until almost done. About 7 minutes; it will finish cooking in a later step so do not over cook at this stage.
  2. In a heavy skillet combine the vegetables and spices. Bring to a simmer.
  3. In a bowl, mix milk, cream, and flour. Pour this into the skillet, then add parmesan cheese and simmer until thik. About 2 minutes.
  4. Add drained tortellini to skillet. Stir to coat and remove the skillet from the heat allowing past to finish it's last bit of cooking for 1-2 minutes.
