- Preheat oven to 425
- Line a baking sheet with foil (easy cleanup) and place baking rack on top.
- Peel sweet potatoes then slice into 1/2" think rounds. Place these on the baking rack and mist them with olive oil.
- Sprinkle lightly with kosher salt, flip them over and mist the other side with oil, sprinkle with salt and nutmeg.
- Bake for 20-25 minutes. The cooking time is very dependent on the thickness of the cut.
Notes
If you do not have olive oil in a mister, just put a tablespoon of oil and the potato rounds in a large ziplock back and shake to coat.
