- Preheat oven to 425
- Wash potatoes, cutting larger ones into bit-sized pieces.
- OPTIONAL: Separate the cloves from a bulb of garlic giving each one a light smash with the side of a knife just to break the skins. But do not peel them.
- Add everything together in a large ziplock or bowl. Shake or stir to coat everything evenly.
- Spread everything out on a foil-lined rimmed baking sheet (best if it's on a rack too) and roast for 20-30 minutes until the potatoes are brown and tender to a fork. If not using a rack, stir them every 10 minutes for more even cooking.
Notes
The garlic will be sweet and tender on the inside and a tiny amount dipped out on the tine of a fork goes well with each bite of potato. But warn guests not to have more than 2-3 cloves total. More will make them sick later. The roasted garlic also makes a great spread for bread.
