Crispy Roasted Potatoes

Ingredients
  

  • 1 lb red potatoes any waxy potato or fingerlings will work
  • 2 tbsp olive oil
  • 2 tsp corn starch
  • 1 tsp baking powder
  • 1/2 tsp pepper
  • 1 tbsp salt plus more for finishing
  • 1/2 tsp garlic powder
  • 1/4 cup parmesan finely grated; plus more for finishing

Method
 

  1. Dice potatoes into 3/4 inch pieces
  2. preheat over to 425
  3. line a baking sheet with foil and place a rack inside
  4. Transfer salt and potatoes to a large bowl of salted water for 30+ minutes (to overnight)
  5. Drain, rinse and pat the potatoes dry
  6. Toss potatoes with olive oil.
  7. Combine cornstarch, baking powder, garlic powder, parmesean, and pepper. Toss this mixture with the potatoes.
  8. Bake for 30-45 minutes. Outside should be golden brown, insides tender.
  9. Sprinkle with additional parmesean and salt to taste.
