Crab Cakes: Chesapeake Bay Style

Just enough non-crab stuff to hold them together.

Ingredients
  

Cakes
  • 1 Egg
  • 1 Egg white discard yolk
  • 1 tsp sharp mustard
  • 1 tbsp Lemon Juice
  • 1 tsp Olive Oil
  • 1/2 tsp Old Bay Seasoning
  • 1/2 tsp Black Pepper
  • 1/2 cup bread crumbs finely ground
  • 1 lb backfin blue crab meat
Frying Pan
  • 2 tbsp olive oil
  • 2 tbsp Butter

Method
 

  1. Wisk together egg, mustard, lemon juice, Old Bay, oil, and pepper
  2. Drain crab meat, and fold into the mixture by hand
  3. Once crab is fully coated, fold the bread crumbs in by hand
  4. Form 6-8 cakes and lay them on a baking sheet with waxed paper underneath
  5. Sprinkle with additional Old Bay
  6. Cover with waxed paper and refrigerate at least 30 minutes
  7. In remaining olive oil and butter over medium-high heat, cook each side 2-3 minutes until golden brown, then remove to paper towel lines plate to drain for 1-2 minutes
