Bangin' Black Beans

Ingredients
  

  • 1/2 lb Hot Sausage
  • 1/2 medium Red onion
  • 4 cloves garlic
  • 1 tsp Oil
  • 1 tsp Cumin
  • 16 oz chicken stock
  • 2 cans black beans rinsed and drained
  • 1 tsp Smoked Paprika
  • 1/2 tsp Black Pepper
  • 2 tsp Salt
Garnish
  • Lime Juice
  • cilantro
  • Hot sauce

Method
 

  1. Brown sausage over medium-high heat.
  2. Drain sausage, leaving some grease behind. Augment this with up to 1 tsp of oil as needed, then add onion, garlic, and cumin and sauté on medium heat.
  3. Add chicken stock, beans, and remaining spices. Simmer until reduced by half or more.
