Our local grocery chain makes their own pico de gallo, but it needs a little help. A half jar of salsa and extra cilantro really improves on their base. If you can find really great pico de gallo, then use it instead. A little salsa might be still be a good choice.
Shrimp Tacos
Ingredients
Shrimp
- 1/2 lb Shrimp Peeled & deveined
- 1 tsp Lemon Juice
- 1 tbsp Butter
- 1/2 tsp Old Bay Seasoning
Pico De Gallo
- 1 pkg pico de gallo Lowe’s
- 4 oz Salsa Paul Newman’s Mild
- 2 tbsp cilantro fresh; chopped
Tacos
- 4 Soft Tortillas Corn or flour; taco size
- 1/2 avacado small dice
- 1 tbsp cilantro fresh; chopped
- 1 Radishes sliced thin then chopped
- 2 tbsp sour cream

- Rinse shrimp in a bowl of water with lemon juice added. Do not let it sit more than a few minutes, then drain and pat dry. Season shrimp with Old Bay. Heat butter in skillet and quickly sauté until just turning pink.
Pico De Gallo
- Combine ingredients
Tacos
- Wrap tortillas in a paper towel microwave for 20-30 seconds. Spread sour cream down the center, then pile on the shrimp and toppings.
