Garlic mashed potatoes for Paul Jones made in the pressure cooker.

Paul’s Red Bliss Garlic Potatoes

Ingredients
  

In the Pressure Cooker
  • 1 lb small red potatoes 1″ halves, or quarters
  • 1 1/2 tsp kosher salt
  • 1 1/2 oz Roasted Garlic
  • 1/2 tsp Black
  • 1/4 tsp onion powder
  • Enough water to cover
In the Mashing Pot
  • 2 tbsp green onion tops
  • 1/4 cup heavy cream
  • 3 tbsp Butter melted
  • 1 oz Parmesan cheese grated

Method
 

  1. Pressure cook (high) for 9 minutes, then mash very lightly with a hand masher.

Notes

Use small potatoes to get more skin in the mixture.
