When you can’t find it in the store, use this instead. Nearly perfect substitute for Mascarpone cheese.

The walnuts can be left out with no ill effect. Using dried cranberries instead of grapes is another variation.  Topping it with a sprinkle of caviar is divine.

This is also a good base casserole recipe that could use other vegetables in place of asparagus.
