Pearl couscous (akaIsraeli) is couscous that is shaped like small 3-4mm pearls. The texture is very different from the ground couscous most Americans encounter.

Method
- Heat two tablespoons of olive oil in a large pan. Saute the couscous in the olive oil briefly until golden brown.
- Bring 3 cups of water to a boil with salt & pepper to taste. Add browned couscous, reduce heat and simmer covered, until water is absorbed. About 10 minutes.
- Remove from heat and let stand, covered, for 2 – 3 minutes. Fluff gently with a fork, then serve.
