Pearl Couscous


Pearl couscous (akaIsraeli) is couscous that is shaped like small 3-4mm pearls.  The texture is very different from the ground couscous most Americans encounter.

Pearl Couscous

Ingredients
  

  • 2 cups Pearl Couscous
  • 3 cups water
  • 1 Tbsp olive oil
  • 2 tbsp butter
  • Salt & Pepper

Method
 

  1. Heat two tablespoons of olive oil in a large pan. Saute the couscous in the olive oil briefly until golden brown.
  2. Bring 3 cups of water to a boil with salt & pepper to taste. Add browned couscous, reduce heat and simmer covered, until water is absorbed. About 10 minutes.
  3. Remove from heat and let stand, covered, for 2 – 3 minutes. Fluff gently with a fork, then serve.
