Mojo Pork


Mojo Pork

Serve with rice (and beans), make into cuban sandwiches, or marinate chicken in the mojo.

Ingredients
  

  • 8 cloves Garlic
  • 2 tsp Cumin
  • 2 tsp black pepper
  • 1/4 cup fresh oregano or small plamful of dried
  • 1/2 cup fresh orange juice 1-2 oranges
  • 1/4 cup fresh lime juice 2-4 limes
  • 1/4 cup olive oil
  • 1 tbsp kosher salt
Pork
  • 6 lb pork shoulder roast remove rind
  • 3 tbsp fresh oregano for serving
  • 1 lime cut into wedges for serving

Method
 

  1. Blend mojo ingredients
  2. divide mojo in half
  3. Marinate pork in on half of the mojo for 2+ hours
  4. Preheat oven to 275
  5. Transfer pork and marinade to a baking dish, cover with foil and bake for 3 hours.
  6. Remove foil, increase oven to 325 and continue cooking for 2-3 more hours until pork is comletely tender. Baste with juices during this stage.
  7. Reserve 1 cup of pork juices and mix it with the other half of the mojo.
  8. Shred pork and serve with oregano, lime wedges, and mojo/juice mix.
  9. Retain the mojo/juice mix for reheating leftovers,. which can be done in a skillet over medium-high heat.

Notes

This is a great marinade for chicken too.  Using smaller amounts of pork will reduce cook times as will using butt steaks instead of one large roast, so adjust accordingly.
